About the event
A two hour deep dive into the craft of simple sauerkraut fermentation. We will begin where all good food stories begin, in the past. You will learn the roots of sauerkraut across cultures, how it sustained communities through long winters, and why this humble preserve remains one of the most powerful foods you can make in your own kitchen.
From there, we roll up our sleeves and you will learn:
The science of wild fermentation, explained clearly and practically
How salt works, and why ratios matter
How to select and prepare cabbage for the best texture and flavor
Proper massaging, packing, and brining techniques
